  1. Take the steaks out of the fridge. Do this at least 30 minutes before you plan to cook (but no more than an hour).
  2. Season steaks with salt and pepper. Choose the rub you want to use. Simpler is always better when it comes to ribeyes – even salt and pepper would suffice. Season the steaks on all sides.
  3. Grill grates should be cleaned. Before you start cooking, make sure you have a good grill brush.
  4. Make a two-zone fire on your grill by turning it up to medium-high.
  5. Preheat the grill for ribeye steaks. For medium rare, cook for 4-5 minutes on each side over direct fire. Why do you require a two-zone setup? You can shift your steaks to the cool side of the grill when they're almost done. Use a meat thermometer to see if your steaks are done to your liking. The following are the temperatures to be aware of.
  6. Remove steaks from grill Let steaks rest for five minutes. The juices will redistribute throughout the meat, producing tender, juicy results.
  7. Serve Serve with a side dish of your choice.
